I love salsa and it has been especially nice to enjoy lately. Below is our favorite recipe so far. It's pretty simple. Enjoy!

Phil's Spicy Salsa

Ingredients

  • 2 regular cans (14.5 oz) diced tomatoes (I like to buy organic)

  • 2-3 jalapenos, tops removed, or sub 1 habanero

  • 2 cups cilantro stems and leaves (whole, washed and dried)

  • 2 garlic cloves, peeled

  • Sea salt to taste

  • Lime juice to taste (This cools the salsa down, so try it first and see if you think it needs any.)

Directions

Mince garlic and jalapeno in a food processor or blender. Add cilantro and mince. Strain tomatoes, add to other vegetables and blend everything until the desired consistency is reached. You can leave it a little chunky or make it quite thin. Add salt and optional lime to taste. Compost the jalapeno tops, garlic paper and excess cilantro.
